Why do universes and planets like mercury defy the laws of thermodynamics if the pancake theory is so valid?

Planetary and universe rotation isn't always clockwise, which defies the entire universe evolution theory. When I asked a mathematician, he told me that asteroids bombarded Mercury until it made an abnormal orbit around the sun, made venus rotate vertically and made entire galaxies spin the 'wrong' direction.
